In 2014 when the Bayou Boys opened The Bayou in Bethlehem the vision for the future was set, but the timeline was never imagined. Before they finished their first summer as new operators the team was approached to open a restaurant in Allentown's Center City. They knew it would be a challenge, but they felt up for it. Twelve months later they opened Grain, a farm to table chef driven concept was and is still loved by so many.
The road is never easy and Grain came with some issues that the team couldn't overcome and ultimately closed the doors in 2018.
While Grain was finishing its first year of operation they doubled down and opened Queen City BBQ (QCB) a few blocks away just across form the PPL Center. This concept featured an indoor-outdoor bar with expansive seating. QCB was an instant hit for the locals and hockey fans.
The concept really hit a stride in the winter of 2019, but that run was abruptly cut short when COVID-19 hit in the Spring of 2020. The team held out for a year, but ultimately decided to close the doors in 2021.
In 2017 the team set their sites on downtown Easton and this time they decided to expand The Bayou concept. A beautiful historic building on the circle right in the heart of Easton, PA with a full glass front perfect taking in the sites.
The second location opened with great fanfare and has become a staple in the thriving Easton restaurant scene.
The next year the fellas decided to switch things up a bit and open a quick serve concept, Wiz Kidz Cheesesteaks. This concept pays homage to their youth as they all grew up in the 80's & 90's. The signature cheesesteak gives a nod to the classics in Philly, but they couldn't stop there. The menu offers a flavor for everyone and regular feature steaks keep things fresh.
